Vidoc, a resistant grape
A resistant grape variety is a natural cross resulting from manual pollination between a European vine (Vitis Vinifera) with recognized oenological aptitudes and a wild American vine (Vitis Rupestris) resistant to the diseases powdery mildew and downy mildew. A kind of super-organic!

Carcassonne
The IGP cite de Carcassonne falls within the Languedoc region. It’s very warm in this part of the world and it’s a struggle to keep freshness in the grapes. With a hot climate this this grapes will naturally want to grow as much sugar as possible but that is not always what is best for the wines. The winegrowers job here is to mitigate this climate as much as they can to produce well balanced wines. This can be achieved by choosing appropriate grapes, blending, choosing high altitude sites to grow and restricting yield. Lack of water is a growing issue here so vines have to compete for available water resources. This is a tool which growers can use by making the vines fight harder to give less grapes or giving them an easy time and letting them produce more grapes.

A Natural Wine
Pet Nat is all the rage with the trendy people (like us!) so you probably need to give it a go and make up your own minds. This is a sparkling wine made in the most natural and old school way possible. Basically the still wine is made and before all the sugar has been turned into alcohol the wine is bottled. The residual sugar is then fermented inside the bottle and as the Carbon Dioxide gas can’t escape so is absorbed by the wine resulting in a soft bubble. The wine has no added sulphur, and the dead yeast cells from the secondary fermentation are left in the bottle. If you see a slight deposit it will be this. Just leave the bottle to rest before serving and they will stay at the bottom. Contrary to most sparkling wine, no sugar is added before closing the bottle so the wine is very dry and as natural as can be! Look at the colour on it, but you can see it's a little cloudy, but not to worry, it's supposed to be like that:


Barbe á Papa?
This natural wine would be lovely with a chilled Melon and Jambon salad. The wine maker's suggest a Barbe à Papa, or candy floss to the British but I've not yet been brave enough to try that - let me know if you do!
